Discussed with several parties about what wine to match with hairy crabs. Some said sweet wine, some fortifed, and some white with high acidity.
But according to wine professionals, the proper choice is vin jaune. They are available in 620ml bottles (called "Clavelins"). I haven't tried that, though surprisingly someone has. But where to buy in HK?
